Duxbury Bay, MA

Goose Flat is the large cull from Real Oyster Cult's farm in Duxbury Bay. Tastes like a ROC Reserve, but it's a heartier, meatier mouthful. Great to Grill and fry, oh my. Grown by Duxbury beach and tumbled by strong currents and two tidal surges daily, Goose Flat has an umami bite + sweet vegetal finish.

Rob + Sims, ROC's own family farm

Rob and Sims didn't set out to be oyster farmers, but this life twist gave birth to their '5th baby' Real Oyster Cult. Rob spent most of his career working on the water, building custom wooden yachts, designing and running maritime programs, and sailing in competitive campaigns. When oyster farming began to boom in Duxbury Bay, Rob applied for a grant. Sims worked in theatre and film as an actress, director, teacher, and screenwriter. In the summers, their kids help on the farm and their oyster float is a hub for work and play. Sign up for a farm tour and/or a float party and experience our little paradise.

The Gritty Details:

2mm seed is upwelled in May-July and then placed in nursery bags until early winter. Wintered over in bags on the bottom, then re-tumbled and planted directly on the tidal flats in late spring. Handpicked at low tide or dragged during higher tides. Time to market: 3 to 4 years.

Flavor Influenced by:

  1. Salinity: 2.9% < 3.5% full oceanic salinity
  2. Tides: 10 ft. tidal range of nutrient-rich waters
  3. Bottom Makeup: Sand and silted tidal flats
